ALL YOU NEED (2-3 people):
boil up 3 dl couscous
half a pepper bell
half red onion
one minced garlic clove
one table spoon tomato purée
a tea spoon curry spice (if you want to)
While the 3dl is getting prepared, fry all the vegetables together in oil. When the couscous is done, mix upp the couscous with the vegetable, one tablespoon tomatopurée, and a bit of curry spice. Voila!
This was my lunch for today, I love it! It’s healthy and it really doesn’t blow up my sensitive belly even though I could have food coma after eating this, haha. I always tend to cook some extra of this and store it in the fridge for the next 2-3 days because it’s so good and you eat it cold. This goes perfectly to any dressing that you like (I have garlic dressing). I love it as a side to chicken breast, too. Just yuuuummie and something you should definitely try out if you like healthy and a happy tummy :-).
